Menu Plan Monday– June 22, 2015

The first week of summer vacation is finally here!  We are having a relaxing week with not many plans.  I like to start out summer vacation slow and give the kids some time to unwind from the school year.  We do have the girls’ dance rehearsals and recitals this week and the first of several high school band mini-camps this summer for Kiki.  This is the first year that the girls have 2 different shows for the recital so that will be a busy day and we’ll be eating out.  For the rest of the week, I’m preparing a fairly typical menu for us, however, this summer I’d like to experiment with some new recipes. I’ll be scouring my Pinterest Board and adding some new selections to our dinner menu and hopefully we’ll find a few that the family will want to add to our rotation.

 

Menu Plan Monday

 

 

Here’s what we are planning for this first week of vacation:

 

Monday-    Thin spaghetti with spicy tomato & basil sauce served with a side of oven roasted broccoli and Pillsbury crescent rolls

Tuesday-  “Mommy’s” Chicken (breaded & fried chicken cutlets) with a Spinach/Kale salad

Wednesday- Grilled Steak (hot dogs for the kids), oven baked french fries and Broccoli salad

Thursday- Leftover Night

Friday- Pizza Night – Frozen pizza, the kids’ fave is Freschetta Oven Baked 5 Cheese

Saturday-Mema’s Salmon- my mother-in-law’s recipe with a side of mashed potatoes and Spinach salad

Sunday- Recital Day -Dinner out tonight

Menu Plan Monday– June 15, 2015

This week is going to be a busy week for our family. It’s the last week of the school year so there are lots of activities happening. My oldest is getting promoted to high school so there is an 8th grade pool party at the local pool and also her middle school promotion ceremony. Our Girl Scout troop (I’m the leader) has a Build-a-Bear trip to the mall. The twins are heading to an end of school year pool party at a friend’s house on Friday. Then, for the weekend, we have a Cub Scout Crossover picnic/space derby and then a Father’s Day/Promotion celebration at our home. Phew! This crazy, busy week definitely needs a menu plan!  

 

Menu Plan Monday

 

Here’s what we’re eating for this last week of school:

Monday-       Thin spaghetti with jerk shrimp, Pillsbury crescent rolls and a spinach salad

Tuesday-       Beef tacos with shredded cheese, sour cream and salsa (we like using Old El Paso seasoning and Stand N Stuff shells)

Wednesday- Leftover Night

Thursday-      Ham steak with mashed potatoes and steamed broccoli

Friday-            Pizza Night (Domino’s Pizza this time- we haven’t had that in awhile)

Saturday-       Burgers and hot dogs at the Cub Scout picnic; We’ll bring this Broccoli Salad minus the almonds as there are some scouts with severe nut allergies

Sunday-          Barbeque chicken, burgers and hot dogs for our Father’s Day/Promotion celebration
